Perfect for the holidays, these vegan snowball cookies are delicious and easy to make!

These cookies are one of my family’s favorite cookies to make during the holidays. The kids love getting their hands in the powdered sugar and mixing in all the ingredients. It’s a very simple recipe, so if you don’t consider yourself a baker, this may be a really good cookie to start with since it’s hard to mess up.

Gather your ingredients
- Vegan butter
- Powdered Sugar
- Salt
- Vanilla
- All Purpose Flour
- Pecans
- Parchment Paper
- Cookie Scoop

Let’s put it all together
Make sure that the butter is at room temperature and your pecans are chopped up before you start. If you have a food processor, throw those whole pecans in there for an easy chop.
You’ll basically mix everything (except for the pecans) together in a bowl or if you have a stand mixer, that would work as well.
Once everything is well incorporated, you’ll fold in the pecans. Than using your cookie scoop (or even a spoon) roll the dough into small balls.

Pop those bad boys into the preheated oven for 11-13 minutes or until light brown. Once it’s done baking, roll each ball into the powdered sugar while it’s still warm.
If you want these cookies to be fully coated with powdered sugar, re-powder the cookies again once cooled.

Vegan Snowball Cookie
Ingredients
- 2 1/4 Cups All Purpose Flour
- 1 Tbsp Vanilla
- 1 Cup Vegan Butter Make sure it is room temperature
- 1/2 Cup Powdered Sugar
- 1/4 Tsp Salt
- 1 Cup Pecans
Instructions
- Preheat oven to 175 C or 350 F.
- Chop up Pecans.
- Mix butter and powdered sugar until smooth.
- Mix all ingredients (except for pecans) together with powdered sugar and butter
- Fold in pecans.
- Scoop dough with a cookie scoop or spoon and roll into small balls.
- Bake for 11-13 minutes or until light brown.
- Once it’s done baking, roll each ball into the powdered sugar while it’s still warm.
- If you want these cookies to be fully coated with powdered sugar, re-powder the cookies again once cooled.
